If you could eat it in a sandwich, you could probably eat it on a cold pizza without being judged. Deli meats like pepperoni, salami, sliced chicken and bacon are generally good, whether they’re served hot or cold.

When it comes to crusts, the thinner the better. Interestingly, when considering sauces, good old tomato sauce is neutral and has more zing at a lower temperature. Barbeque sauce is a good second choice, but it tastes quite different once it’s soaked into the crust in the fridge; you’ll notice a sweeter, less smoky flavour.

So why does cold pizza taste so good? It helps that oil and water don’t mix, keeping the cheese from seeping into the dough and making it soggy. Textures change at colder temperatures, as do flavours. Some flavours become more apparent when eaten cold whereas others seem more distinct when they’re hot. This is because at higher temperatures, the tastebuds change and send signals to the brain differently.
